Rule 1: buy fresh coffee beans

The best coffee beans is used within a few days after roasting, so I suggest that you can buy the coffee beans from a local roaster (or bake it yourself), I know this method is a bit cumbersome, but it is the most reliable way to get fresh coffee beans.

It is not good if you buy bulk coffee in the display rack, especially if it is not sealed. Oxygen and strong light are important factors that affect the freshness of coffee. Coffee beans will oxidize and deteriorate due to sunlight and oxygen if not package well. After roasting in a regular roasting machine, the coffee beans sold in sealed bags with one-way exhaust valves, if you can find such coffee beans, it would be perfect.

Rule 2: keep the coffee beans fresh

Coffee beans will keep fresh under the good storage environment. Don’t forget to store in an airtight container after opening the coffee beans package. Glass jars or sealed ceramic storage jars with rubber gaskets are good choices.

Never refrigerate coffee beans, roasted coffee beans are porous and are particularly easy to absorb moisture and food odors. Flavor experts strongly advise against freezing coffee, especially deep roasted coffee beans. I suggest that you can buy enough fresh beans for 15-30 days each time, and keep at room temperature.

Rule 3: Choose the coffee beans that suit you

There are many types of coffee beans, and the related knowledge is comparable to the complexity of wine. Professional coffee beans manufactures should clearly state the country of origin and region, and should also allow consumers to have a good tasting experience.

There are two main types of beans on the market, Arabica and Robusta. Arabica only grows at high altitudes. The high altitude environment makes the coffee beans grown here mature more slowly, making the beans stronger and richer.

The Arabica variety originated from Ethiopia and has been cultivated in the Arab region for more than a thousand years. The coffee beans here are known as the highest quality coffee beans, with more subtle flavors and more pleasant aromas than their distant relative Robusta.

Robusta, also known as Coffea canephora, has a slightly lower price than Arabica and is traditionally grown at a lower altitude. Easier to grow, better resistance to diseases, and higher productivity.

Robusta contains almost twice as much caffeine as Arabica. It is most often used to match Arabica to increase the rich taste of espresso or to give instant coffee a sense of thickness. It is often made into American latte.

Of course, the flavor of Robusta cannot be compared with Arabica, so Arabica beans are still the favorite of coffee fans.

Rule 4: Freshly grind your own coffee beans

Good coffee grinding is very important. Coffee will begin to lose its aroma and taste immediately after being ground, grinding before brewing can better preserve the coffee flavor. 

Many professional coffee lover mostly like to pursue expensive grinders, But in fact, most people only need a medium-priced electric grinder, which is enough for daily use. Furthermore, expensive grinders are often very picky about coffee beans, so the one that suits you is the best. Don’t forget to turn on the coffee grinder firstly before to put into the coffee beans, which can reduce the coffee powder produced by momentary torque, and avoid jamming the coffee beans.

Rule 5: choose good water

There is no uniform definition of coffee water that is absolutely suitable for brewing in the coffee industry, however, water with chlorine gas is the easiest to destroy the flavor of a cup of coffee. So professional baristas use activated carbon/carbon filter on the taps, or there are also baristas who use professional bottled coffee water. 

It should be noted that soft water or distilled water may not produce enough extraction power to extract coffee flavors. The minerals in the water, especially the perfect ratio of calcium and magnesium, are very important. Mineral water rich in magnesium and calcium minerals is sometimes more suitable for brewing sweet coffee.

Rule 6: Use suitable filter paper

According to experts, cheap coffee filter paper will produce poor quality coffee. Try to choose oxygen bleached filter paper, or filter paper that does not contain dioxin, such as white Merita filter paper, CHEMEX and V60 filter paper. Coffee lovers can also choose to purchase a long-life metal filter. However, if the coffee powder is ground too finely, the sediment may pass through. Therefore, the relationship between coffee bean grinding and filter paper is also very important.

Rule 7: Don't be too stingy, save coffee beans

Don't skimp on the amount of coffee beans used. The standard for brewing a proper concentration of coffee is about 1:12-1:18 powder-water ratio, that is, 1 gram of powder corresponds to 12-18 grams of water.Using less coffee powder and overheated coffee water to extract coffee will produce a bitter taste.

Rule 8: pay attention to the temperature of the coffee water

The temperature of the coffee water is very very important for coffee brewing. The boiling hot water will extract the bitterness in the coffee. The proper coffee extraction temperature is 83-96°C. Most premium coffee machines will automatically adjust.

The flavor quality of coffee will gradually decline once finished brewing. It will destroy a perfect coffee if you reheat, boil or store coffee for a long time.

Rule 9: Keep your coffee equipment tidy

For all baristas or coffee lovers, the cleanliness of the equipment is very important. Good cleaning habits can maintain the stability of coffee deliciousness.

The storage container and grinder must be cleaned every few weeks to remove any oily deposits. At least once a month, you can use a special coffee cleaner/powder to dissolve the coffee residue and rinse thoroughly.
